Our intention from the outset was to create an environment where the best of Burgundy could be assembled, shared, and taught.
The kitchen at Cromey, the center of all household activity, was thoughtfully designed as a teaching facility and a workshop, right down to the sliding metal workshop doors. Workshops at Cromey are hands-on sessions where the food and wine of Burgundy truly come alive.
Good cooking is based on good technique and good ingredients. Simple products become classic regional specialties. And from these classical foundations spring modern ideas. Our goal with these Workshops is to bring all of these elements together. Exceptional ingredients, solid technique and a modern sensibility.
Join us for a 3-day introduction to how we translate Burgundy food (and wine) here at the Domaine de Cromey. We’ll look at Burgundy Basics: the ingredients, specialties and classic recipes that make Burgundy a culinary destination. You’ll learn techniques that transcend recipes and that will give you the confidence to explore your own ideas. And we’ll spice it all with themed wine tastings that will bring Burgundy ‘terroir’ to the table and to food pairings.

Those traveling with a Workshop participant but not participating themselves can dine for an additional charge for the lunch and 2 dinners included in the program.

Join us for an entertaining and educational exploration of Burgundy’s renowned culinary culture. In addition to hands-on gastronomique workshops in the kitchens and bread house at Cromey, we will visit with specialist chefs, artisan food producers, cheese makers and winemakers who bring Burgundy’s traditions alive.

Classes are limited to (and require) 6 participants. Weeks begin on Saturday afternoon and end after breakfast on Friday.
